Today I would like to introduce one of my favorite recipe.
This is great for Friday night or even Monday night! (Yes I cooked tonight!)
Ingredients :
Chicken : You can use whole chicken about 1.5kg quartered.
Or 4 whole leg chicken.
Make marinade — one (or two if you like spicy) fresh chilli, 2 garlic cloves, 4cm piece root ginger, 2 tsp fresh thyme, 2 onions
Put them in a food processor and blitz until well blended. Transfer them to the marinade container and add
1/2 tsp all spice, 120ml soy sauce, 120ml apple cider vinegar, 1tbs honey.
Mix them well.
Place chicken into marinade container.
Pour over the sause and put in a fridge 8hrs to overnight.
Pre heat oven to 180℃. Transfer chicken and all the marinade sauce to deep roasting tin. Roast for 45-50mins until chicken is cooked.
Serve with some nice green like broccoli or boiled beans and don’t forget to make this nice delicious coconut kidney beans rice.
Coconut kidney beans rice :
Chop 1 garlic clove, fly in a pan with 1tbs of butter, add diced 1 onion and sauté for 5min.
Rinse 1 cup of jasmine or basmati rice and place in a pan. Drained a tin kidney beans and put them in a pan. Put one tin coconut cream and 2 cups of water, add one chicken or vege stock, add 1tbs fresh thyme.
Put a lid and cook them low heat until the rice absorbs all the liquid.
You guys definitely need to try this recipe.
