My partner and I had a great dinner tonight.
Thought I’d share with you guys as it was like a “Indian restaurant curry”.
I know many of you are craving for “restaurant” or take away food as we are still in lockdown.
Alright, let’s jump into the menu.
I will write down how I made tonight.
Trust me, my partner gave this dinner 10/10!!!
Here is what you need;
・Passage To India Sri Lankan CHICKEN CURRY
I normally shop at NW online and they carry this delicious Passage To.. series.
・Free range chicken thigh 450g
・Chantel Organic Coconut cream
・chopped dried red chilli about 2cm with seeds
I usually use Ceres Organic Coconut cream as I like their texture but NW was running out so I’ve got Chantel instead.
Follow the recipe written on this curry package.
I have add 200ml Coconut cream at the end.
Make Coconut Sambol
・Chantel unsweetened Desiccated coconut 50gram
・One whole shallot, diced finely
・Two Fresh lime juice
・3 whole clove garlic, crushed
・salt 1/4tsp
・Two teaspoon of Chilli powder
Literally mix all of them together with fingers. Becoming Orangy colour is a good sign.
Make this Sambol in advance. Let it sit for few hours.
I made fried mushrooms and steamed beans. Steamed basmati rice.
Serve all of them in a bowl nicely.
Squeeze fresh lime on top.
It was soooo delicious.
I think that Coconut Sambol was a key.
